In the first part, we have already summarized what really matters when it comes to carbohydrates. Since this topic is so important for a balanced diet, we’ll shed some light on it for you in this 2nd part.

Our brain has not yet adapted to the large amount of carbohydrates

Walk into a supermarket today and carbohydrates are ubiquitous. Pasta, flour, rice, puddings, sauces, convenience products, sweets, snacks … they’re all dripping with it.

No one has to make any more effort for this. On the contrary, the challenge is to find something without carbohydrates in the mass of food.

So keep your eyes peeled – carbohydrates are among the mandatory information on foods, so after all, it’s easy to look up which food is high in carbohydrates and how.

Carbohydrates as a component of our food

If we look at our food, we can divide it into four groups:
Carbohydrates are exclusively pure energy suppliers. Think of them as paper. Paper burns quickly and violently. Can you use well to light a fire. But to make it burn in the long term, you need other substances. In the body, these are fats, proteins vital substances such as vitamins, minerals, antioxidants, trace elements. They build you up and make you strong and capable in the long run.

Vital substances, fats and proteins do not only provide short-term energy. They also provide building materials for our body cells, organs, make happy hormones and build our immune system.
In short, they keep us healthy in the long term.

In today’s mainstream, almost everything is focused on short-term enjoyment. The mainstream person then also feeds on carbohydrates for the very largest part. Fits. But is that what YOU want? After all, it is the mainstream that is too fat in old age and not those who consciously eat sustainably with vital substances, porteins and healthy fats.

Sounds very good at first. We can use energy in our strenuous everyday life. But there is a flip side to the coin.

Our energy consumption is not designed for an excess of carbohydrates in our modern diet.

All carbohydrates are sugars

Carbohydrates are nothing more than sugar in various forms, but in the end they are still sugar. Carbohydrates taste particularly sweet and can be utilized by the body extremely quickly. They are mainly found in convenience foods, bread, pizza, sweets, pasta and fruit. They burn just like paper, fierce, fast and hot.

Unfortunately, even the fructose in fruits is not healthier than other sugars. Vegetables are therefore significantly healthier than fruits.

If we eat these extremely quickly available substances, we feel it immediately. The blood sugar level skyrockets, we experience a real energy boost, which unfortunately is usually short-lived, because the body quickly counteracts. In general, these carbohydrates are delicious but only useful in small amounts.

For a long time, carbohydrates were something special

Carbohydrates are ideal for our glucose-demanding brain, which sets up a tricky reward system to get us to eat them.

Fruits were an important source of energy for early humans. If he could find a sweet piece of fruit, it was high-calorie food and important in times when people didn’t get food from their refrigerators at home but had to work hard for it. Something like that was immediately rewarded by the brain with dopamine, so that as much of it as possible was eaten.

Every time you eat something that contains carbohydrates, your brain releases dopamine and rewards you for it. Eating carbohydrates is pleasant and creates a good feeling. This innate preference has become harmful necessary in modern industrialized countries, as we have far too many carbohydrates in our food supply.

Preventing obesity instead of fighting it

Considering what carbohydrates do in our bodies and the effect they can have on our weight, an Einstein quote comes to mind:

“A wise person solves a problem. A wise person avoids it”

In other words, be wise. When it comes to weight, take precautions right away and avoid overdoing it with carbohydrates. Rather, ensure a balanced diet in which vital substances, fats and proteins play the main role.

In part one, we already reported that protein is the most underrated nutrient in our diet, why its benefits are so great, and how you can best benefit from it. In this second part, we will go over different protein sources, how these proteins differ from each other in quality, and which protein is particularly good and tolerable for the body.

Important: the source of protein

You should definitely be clear about where proteins come from. Depending on the animal or plant source, the amino acid profile of proteins differs. Proteins from slaughterhouse waste, while very favorable to manufacturers, may be contaminated with pathogens and contain drugs and hormones. Low quality whey protein (Whey) can lead to acne and fatigue. Inferior proteins of animal origin can cause elevated blood pressure, increased risk of type II diabetes, increased risk of bone fractures, and kidney stones. Bovine Meat and Milk Factors (BMMF) have been found in conventional cow’s milk, which can cause chronic inflammation and increase the risk of colon and breast cancer. Do you, dear reader, consider vegetables and fruits to be equally healthy? It is one of the most common fallacies about nutrition, because they are far from it.

Fruits and vegetables are not equally good for health

When we talk about healthy eating, fruits and vegetables are always mentioned as equally healthy. They are not. We believe that vegetables are significantly higher quality than fruit.

Because unlike vegetables, fruit contains high amounts of a substance that, among other things. can put a lot of strain on the intestines:

The fruit sugar (fructose). Meanwhile, fructose is even held responsible for some chronic diseases in the whole organism.

Even the German Nutrition Society has become more cautious in recommending fruit.

What makes fruit a critical food?

In the past, fresh fruit was available to us only when it could be harvested from the local trees and bushes. There was little variety, the fruit was not overbred, not loaded with ripening accelerators, and only available at certain times of the year.

Nowadays there is a very wide range of fruits all year round, most of them imported. We find exotic fruits of all kinds in the fruit counter, as juices, smoothies, chutneys, purees, jams, preserves, in yogurts and, in dried form, as snacks, in mueslis and bars. Many of them consist of high amounts of hidden sugars.

For example, 100 g contain:

  • Bananas: 21 g fructose
  • Grapes: 17 g fructose
  • Lychee: 17 g fructose
  • Figs: 16 g fructose
  • Pineapple: 13 g fructose
  • Mango: 13 g fructose
  • Pears: 12 g fructose
  • Nectarines: 12 g fructose
  • Apples: 11 g fructose
  • Cherries: 11 g fructose
  • Plums: 10 g fructose
  • Watermelon: 6 g fructose

Dried fruit is even higher in sugar. Apples, dates and raisins, for example, contain up to 70 grams of sugar.

Berry fruits are the lowest in sugar. Strawberries, blackberries and raspberries, hit with a maximum of 5 mg. At best, the lemons are lower.

Fructose is about ⅓ sweeter than glucose (grape sugar). If you feed your children lots of fresh fruit, you condition them to like sweet foods from a very early age. Nowadays, since the taste of particularly sweet fruits is preferred, fruits with more and more sugar are bred.

Fructose from fruits is joined by that from soft drinks, bread, sweets, ready-made sauces, soups, canned foods, etc., to which high amounts of the sugar are added. Excess glucose is also converted to fructose. So at the end of the day, the balance of fructose can reach a worrying level.

And how much fructose is contained in vegetables?

Among vegetables, there are also forms rich in fructose, such as cabbage, kohlrabi, eggplant and carrots. However, the sugar levels are nowhere near those of fruit.

The highest concentrations are about 1.3g/100g of vegetables. In contrast to fruits, the positive vital substance content outweighs the damage caused by the fructose.

Silicon occurs naturally in our body. Each person has about 20mg of it per kilo of body weight, but there is evidence that this concentration decreases with age. Our immune system has a single task: to defend and destroy invaders that are harmful to our health. These can be viruses, bacteria, microorganisms.

There are 3 options:

1. your immune system is stronger, wins. The disease is over.
2. your immune system is too weak. They die.
3. the immune system does not win completely: The pathogen continues to nest in the body and your immune system fights against it unsuccessfully. The energy consumed here is missing in your everyday life. They call it chronic fatigue syndrome, burnout.

Case 3 is by far the most common:
It is by no means the case that the immune system functions “by itself”. The right combination of proteins and related amino acids, vitamins, minerals and trace elements are a basic condition for a healthy and well protective immune system.

T cells, lymphocytes and antibodies

Due to the media coverage surrounding the coronavirus, we have all become experts on how the immune system works in the last two years – but let’s summarize the most important thing once again:

Essentially, the immune system consists of two important components: Cells that circulate in our blood vessels and thus find their way directly to the invaded pathogens to fight them there and proteins that support these cells. In the following, we address both:

Cellular components

The first of the two pieces of the puzzle is a wide variety of cell types that are part of the immune system. Granulocytes and macrophages (giant macrophages) recognize pathogens and try to “eat” them. Killer cells identify cells attacked by the disease and destroy them. The T cells we hear so much about lately have in common that they are produced in the thymus gland, and from there they make their way to infected cells and pathogens.

All these cells must be formed by our body. For this, the body needs raw materials in the form of vitamins, minerals, trace elements and protein. For the cellular components, our body absolutely needs B vitamins, vitamins C, D and E, iron, zinc and selenium. And as always when it comes to the body’s supply, many of these substances can only develop their full effect if, in turn, other auxiliary substances are sufficiently available.

Plasma proteins

The second important part of our immune system is various proteins – proteins that support the cells. Here, too, there are different types with different functions – the best known are certainly the antibodies: a fascinating concept:

Once our body has recognized pathogens, it begins to produce these antibodies that match the pathogen in question like a key to a conclusion. Customized processes tailored to the pathogen thus ensure that the problem can be combated in a targeted manner. In addition to antibodies, there are other aspects of the immune system that are formed from proteins, but that would go beyond the scope of this article.

Importantly, without adequate protein supply, the body cannot fabricate these important components and our immune system cannot function. More about this in the following.

The biggest problem for the immune system: undersupply

As just explained, the most important condition for a well-functioning immune system is a particularly good supply of vitamins, proteins, trace elements and minerals.

Only when these raw materials are available in large quantities and of the best quality can our body produce the necessary cells and plasma proteins. If the raw materials are missing, the immune system suffers.

Modern physicians who have understood the importance of a good supply of vital substances and treat their patients with a focus on this, repeatedly find deficits in their patients here, which can lead to a not optimally functioning immune system.

Two of these physicians are Dr. Ulrich Strunz and Dr. Michael Spitzbart. Both attach great importance to a good supply of vital substances. They regularly report on real-world examples in their books and web blogs.

In his book “Frohmedizin” Dr. Strunzt reports in detail on the consequences of this undersupply. To name just a few examples:

  • The total protein in the body is the main building block of antibodies. Too low a value prevents sufficient formation
  • Valine, phenylalanine and other amino acids determine in detail how well these antibodies can be formed
  • Vitamin B6 directs these amino acids to the immune system – here, too, a deficiency quickly becomes dangerous
  • Vitamin C – most people already know – is also very important and represents a large part of the formation of cellular components
  • Zinc also plays a role here. If the zinc concentration is too low, the necessary cells cannot function as intended.

Treat yourself to an optimal immune system

As you can see, you can support your immune system by making sure you get the best possible supply of all vital substances and especially amino acids found in high-quality protein.

Vitamin B12 is very important for the proper functioning of our cells.
